The ingredients needed to prepare Olive Oil Rice:
- Use 3 cups Basmati Rice
- Provide 3 cups water
- Take 1 large red onion - finely slice
- Take 2 cloves garlic - crushed
- Take 1 bunch screwpine leaves (pandan leaves)
- Use 1 stick cinnamon
- You need 4 pods cardamon
- Get 6 cloves
- Get 1 star anise
- Get 4 oz skim milk - lactose free if you are allegic to lactose
- You need 3 tablespoon rose water
- Prepare Some safrron
- Get Food yellow coloring
- Get to taste Salt
- Take 1 tablespoon raw sugar
- Take 4 tablespoon olive oil
- Use For garnish - Fried shallots and raisin / dates
Instructions to make Olive Oil Rice:
- Wash the basmati rice and add water as in the list. Soak for 15 mins. Place in rice cooker and do not turn the switch on.
- Add olive oil to a pan but do not heat it. Add cinnamon stick, cardamon, star anise, cloves,screwpine leaves. Turn on the fire(medium) and sauteed for 5 minutes. Add skimmed milk and continue the process for another 2 minutes. Turn the fire off. Set aside.
- Add the sauteed ingredients to the rice. Add salt and sugar. Turn on the rice cooker. Halfway during the cooking process, stir the rice lightly to balance the flavoring.
- Prepare the rose water by adding the saffron and yellow coloring. Add to the the rice with a straight line option. DO NOT STIR. Let the rice continue to it's cooking process.
- Once rice is fully cooked, add chopped dates or raisin and fried shallots. Allow rice to rest for 30 minutes before serve.
