The ingredients needed to make Protein Pancakes:
- You need 4 eggs
- Prepare 1 onion chopped finely
- Get 4-5 garlic cloves grated
- Get 4-5 hot green chilli chopped finely
- You need 1 carrot chopped finely
- Get 150 gm besan/gram flour
- You need 150 gm maida/All-purpose flour
- Provide as needed Milk
- Get to taste Salt
Steps to make Protein Pancakes:
- Chop up the ingredients specified above. Usually I’m in a hurry and I may give the onion, carrot, garlic and chillies a quick spin in the mixer grinder (no water), so that it chops up fine, retaining enough texture.
- Mix it up with the eggs, besan and maida. Use milk to mix it all up so that the mix is a little runny. Pro tip: Don’t bother mixing every bubble of maida, leave it overnight in the fridge, it will come together nicely. Mix it up next morning just before frying.
- Oil your tawa with ghee/refined oil (use a brush to control the oil)
- Ladke out 2-3 scoops of pancake mix and twirl your tawa around so it spreads equally
- Each side take about 3-4 minutes. No need to oil when you flip.
- And it’s ready to eat, serve with mayo and tomato sauce or your favourite chutney.
