  1. Use 100-150 gms baby octopus
  2. Take 1 cup red wine (pinot is my preferred)
  3. You need 200 gms squid ink pasta
  4. Provide 1 red chilli
  5. Use Fresh Basil
  6. Get 1 clove garlic

  1. Wash octopus in cold water, drain and pat dry with paper towel
  2. Combine red wine, garlic, chilli in a bowl, add octopus and stir. Cover with plastic wrap and place in the fridge for an hour to marinate or overnight
  3. Pour the marinade and octopus into a saucepan and simmer on low
  4. Meanwhile cook squid ink pasta according the packet directions
  5. Heat a grill pan on high, drain octopus from marinade, and add to pan turning once cooking until they are just cooked through approx 4-5 mins
  6. Add cooked pasta and octopus on a serving dish, drizzle over the marinade
  7. Add fresh basil, lemon and serve!
