- Use 3 stalks Celery (diced)
- Provide 1 medium onion (diced)
- Use 1 large carrot (diced)
- You need 1 (4 oz) package of diced pancetta
- You need 1 (8 oz) package cream cheese
- Take 1 (12 oz) package chorizo pork sausage (casing took off and diced)
- Provide 4 cloves garlic (diced)
- Prepare salt & pepper
- Take 1 tablespoon butter
- Use vegetable oil
- You need 20 silver dollar (button) mushrooms
- Provide 3 sprigs thyme
Instructions to make Stuffed mushrooms:
- Heat butter and oil in pan.
- Add diced pancetta and cook until golden brown
- Add diced celery, diced onion, diced carrot,garlic and thyme to pancetta and cook until veg are tender (about 10 mins) salt and pepper to taste.
- While cooking pancetta and veg, decase the chorezo and dice small. After veg and pancetta are done cooking add diced chorezo and cook 5 mins.
- Take off heat and let cool while to prep your mushrooms. Take stems off of mush and clean with damp papertowel.
- Add cream cheese to pancetta, chorizo and veg mixture and mix until combined (taste for seasoning at this point and salt and pepper to taste).
- Preheat oven to 400° and begin stuffing your mushrooms.
- Once mushrooms are stuffed add to the 400° oven and cook for 20-25 mins.
- Take out of oven let cool for 5-10 mins then enjoy!
