The ingredients needed to prepare Mango Pickle:
  1. Use 2 kg bag green mangoes
  2. Prepare 250 g pickle masala (with salt)
  3. Take 1 tsp salt (if using pickle masala without salt add 2Tbs)
  4. You need 3 cups oil
Steps to make Mango Pickle:
  1. Wash and cut mangoes in quarters, take out the seeds. Place in a large bowl, sprinkle salt over and mix through. Cover with a cloth and leave in sun to dry or leave overnight.
  2. Pat the mangoes dry with a cloth and add the pickle Masala. Heat the oil in a saucepan. Leave the oil to cool for 5 mins and add to the mangoes. Mix through and put the pickle into washed and dried bottles. Make sure the mangoes are covered with the oil. Leave for a week and enjoy. Should fill 6-7 (300g) bottles.
