- You need 2, 1/2 cups sifted plain flour
- Get 5 tbsp cocoa powder
- Provide 1 tsp vanilla essence

- Use 2 tsp baking powder

- You need 1 1/2 cups sugar
- Prepare 100 ml cocoa powder
- Take 1 tbsp ground coffee
- You need 1/4 cup cornflour
- Prepare 1 cup milk
- Get For the vanilla ice-cream :
- You need 500 ml fresh cream
- Provide 385 g condensed milk
- Take 1 tsp vanilla essence
Instructions to make Vanilla Brownie Ice-cream:
- Preheat the oven to 180°C. Grease and line a square baking tray. In a bowl sift the flour, baking powder, baking soda, sugar, salt and cocoa and mix.
- Make a well in center and add water, oil, essence and vinegar. If the batter is too stiff add little more water.
- Spread the batter evenly into the prepared pan. Bake for 15 minutes or until a toothpick comes out clean. Leave to cool and cut half of the tray into tiny chunks.
- Prepare the fudge sauce. Add the dry ingredients (sugar, cocoa powder, ground coffee and cornflour) to a saucepan, mix through. Add the milk and mix until there are no lumps. Place over low heat until thickened. Leave to cool and set aside. *Extra sauce can be stored in the fridge and warmed when needed for desserts.
- Make the vanilla ice-cream. Pour the fresh cream into a processor or stand mixer and whip until slightly stiff peaks form. Pour in the condensed milk and vanilla and gently fold the mixture.
- Add the brownie pieces and fold them in. Pour half of the ice-cream into a 2L container, top off with a few pieces of the left over brownie and drizzle chocolate sauce over. Pour the rest of the ice-cream over and spread it evenly, top off with a few more brownie pieces then chocolate sauce. Seal the container with a lid and freeze overnight.
