Instructions to make Vanilla Brownie Ice-cream:
  1. Preheat the oven to 180°C. Grease and line a square baking tray. In a bowl sift the flour, baking powder, baking soda, sugar, salt and cocoa and mix.
  2. Make a well in center and add water, oil, essence and vinegar. If the batter is too stiff add little more water.
  3. Spread the batter evenly into the prepared pan. Bake for 15 minutes or until a toothpick comes out clean. Leave to cool and cut half of the tray into tiny chunks.
  4. Prepare the fudge sauce. Add the dry ingredients (sugar, cocoa powder, ground coffee and cornflour) to a saucepan, mix through. Add the milk and mix until there are no lumps. Place over low heat until thickened. Leave to cool and set aside. *Extra sauce can be stored in the fridge and warmed when needed for desserts.
  5. Make the vanilla ice-cream. Pour the fresh cream into a processor or stand mixer and whip until slightly stiff peaks form. Pour in the condensed milk and vanilla and gently fold the mixture.
  6. Add the brownie pieces and fold them in. Pour half of the ice-cream into a 2L container, top off with a few pieces of the left over brownie and drizzle chocolate sauce over. Pour the rest of the ice-cream over and spread it evenly, top off with a few more brownie pieces then chocolate sauce. Seal the container with a lid and freeze overnight.
